Here's a step-by-step guide to freezing cauliflower:
- Start with fresh, firm cauliflower. Choose one with no black spots or wilted leaves. Rinse it under running water and remove the leaves.
- Soak the cauliflower in a saltwater solution (1 tbsp salt per 1L water) for 20 minutes to remove any insects. After soaking, rinse the cauliflower again under running water.
- Dry the cauliflower thoroughly on a clean towel until completely dry. This step is crucial to prevent spoilage in the freezer.
- Divide the dried cauliflower into bags (150-250g), label the weight, and remove as much air as possible from the bags. You can use a straw or a vacuum sealer for this.
- Freeze the bags at -18°C. For convenience, it is recommended to use zip bags for freezing the prepared cauliflower. Pre-portioned bags simplify the calculation of ingredients when cooking.
- Cauliflower frozen using this method can last up to 9 months. It can be used directly from the freezer for soups, bakes, or sides without thawing.
- Some variations of this method include blanching and drying the cauliflower before freezing. Darja Chernenko discovered that this step helps maintain the vibrancy and fragrance of dishes. To blanch, place the cauliflower florets in boiling water for 3 minutes, then cool under cold water or ice cubes. Dry the blanched cauliflower thoroughly before freezing.
- When preparing cauliflower from the freezer, divide it into large chunks for pureed soups and small florets (3-4 cm) for sides and bakes.
Remember, skipping the blanching and drying steps may lead to cauliflower spoilage in the freezer.
