Renowned chef Yannick Alléno assumes control at Monsieur Dior, pondering the hypothetical question: "How would Christian Dior design a restaurant in contemporary times?"
In the heart of the fashion capital, a culinary masterpiece has been revitalized. Yannick Alléno, renowned French chef, has taken over as the head chef at Monsieur Dior restaurant, located at 32 Av. Montaigne, 75008 Paris, France.
Alléno, who also presides over Le Jardin and Le Café at the same address, brings a fresh approach to the art of sauce, focusing on the extraction and fermentation of flavors. His philosophy, Modern Cuisine, combines scientific technique and ancestral memory to reinvent French gastronomy.
The restaurant, designed by Peter Marino, weaves Dior's codes into a modern design. The venue, which originally opened in 2022, boasts parquet floors, delicate caning, black-and-white houndstooth chairs, and a scarlet feature wall adorned with a constellation of miniature images from Dior's archive.
Under Alléno's direction, Monsieur Dior offers a daily défilé of flavors, embodying its era like the house of Dior does with couture. One of the signature dishes, the L'Œuf Christian Dior, pays homage to the late Christian Dior. This dish, which includes a quenelle of Prunier caviar, caviar-studded cream, and a layer of Paris ham aspic, was initially created by Dior himself during a dinner party with Yves Saint Laurent and Pierre Berge.
Alléno finds inspiration for his menu from a cookbook released by Dior in 1972, called La Cuisine Cousu-Main. His vision for Monsieur Dior is to bring the spirit of Christian Dior to contemporary culinary creation.
Replacing Jean Imbert, Alléno marks the 19th restaurant he oversees. His tenure at Monsieur Dior promises to be a gastronomic journey, where forms, textures, and finishes are as important as flavors, reflecting the late Christian Dior's spirit.
