In the heart of Nyack, New York, a unique kitchen garden is flourishing, made possible by the generous and locally grown support of Montefiore Nyack Hospital. The garden, which is overseen by Sandra J. Arévalo, MPH, RDN, CDN, CDCES, CLC, FAND, the Director of Community Health & Wellness at Montefiore Nyack Hospital, is teeming with a variety of vegetables and edible flowers.

The garden is home to an array of colorful vegetables such as Rainbow chard, Chioggia beets, Yaya carrots, Tavera beans, Beira kale, Sugar Snap peas, Rover radishes, Hakurei turnips, Lemon basil, Padrón peppers, Fioretto cauliflower, Benefine endive, Adam gherkins, Little Gem lettuces, Purplette onions, Romanesco zucchini, and Cesare's tomatoes.

In addition to these vegetables, the garden also boasts a selection of edible flowers that offer benefits to the garden or satisfy the gardener's obsession. Some of these include Helen Mount violas, giant orange and yellow marigolds, chamomile, trailing and Alaska mix nasturtium, sweet alyssum, borage, lavender, yarrow, calendula, echinacea, ornamental kale, "Hairy Balls" milkweed, and cockscomb.

The garden's tools have been carefully curated over the years, including Texas Tomato Cages, Garden Kneeler, Grow Ease Seed Starter, Garden Markers, Washdown Gun, Niwaki Snips, Super-Birki clogs, bamboo poles, SunLite Grow Lights, and Supergoop Unseen Sunscreen.

When it comes to planting, vegetables and some flowers are buried horizontally in a 4- to 6-inch-deep trench long enough to fit the plant. For instance, tomatoes should be planted sideways, laying the plant on its side for a day until the top turns upward toward the sun, and then buried horizontally in the trench.

Maintaining a healthy garden involves growing plants that make good soil. Composting junk, saving eggshells, and treasuring coffee grounds can significantly improve the quality of the garden soil.

As winter approaches, garden beds can be plotted out and seeds ordered. A sketch pad can be used for this purpose. Remember, a diet rich in colorful fruits and vegetables is crucial for good health, and what better way to ensure a steady supply than by growing them in your own kitchen garden?
